Ogilvie's Devil's Chilli & Lime Jam

As the name suggests, this "Devil's" Jam has got a kick that is addictive. Spice up any chicken kebab with this condiment or serve dallops on a gourmet pizza. Fresh red chillies cooked with the sweetness of sugar and slivers of lime make for a combination that can compliment your next stir fry or even a fresh prawn salad.

Caramel Onion & Balsamic Relish

Rich, juicy & sesational with beef, the great flavours of onions cooked slowly to turn their own sugars to caramel then splashed with the dark, full bodied balsamic vinegar makes this relish an intense flavoured condiment that's a must served with any roast or hearty meal. It's a surprising addition to the breakfast table as a more savoury spread on toated sour dogh with cream cheese or with your bacon & eggs.

Smashed Berry & Vodka Sauce

The sweet but tart flavours that ooze out from smashed berries go well with the generous shot of Vodka to make this sauce perfect poured over a big bowl of tropical fruit salad served with cream. And if you want a great way to start the day, try a splash of this sauce over your bowl of muesli and yoghurt with a sprinkle of roast slivered almonds. Of course you can always pour over a bowl of ice cream, a pudding or cake or even splash on pancakes and waffles.

Goats Cheese and Rocket Salad

Serves 4
200g fresh rocket leaves
100g aged goats cheese log
80g walnuts, toasted
Freshly ground black pepper

Vinaigrette
1 clove garlic
2 tsp red wine vinegar
4 tbsp extra virgin olive oil
2 tbsp walnut oil
1 tsp lemon juice

METHOD:
To make the vinaigrette, crush the garlic clove into a small bowl and rub around the inside to coat the surface then discard. Add the other vinaigrette ingredients, whisk to combine and set aside.
Slice goats cheese into 1cm rounds and place onto a metal tray. Combine the rocket and walnuts and place into a bowl. Add vinaigrette, toss the salad lightly with fingers and arrange on a platter. Place the goats cheese under a grill and warm slightly for 10 seconds. Add to the rocket leaves and serve.

Smoked Beef and Bush Tomato Pizza

1 large (12in) Pizza Base
½ cup/100gm Red Ochre® Bush Tomato Chilli Sauce
½ cup/100gm finely chopped smoked beef (try also kangaroo salami or pepperoni)
1 medium tomato - diced
1 sliced capsicum
10 - 12 black olives - pitted
4 - 5 anchovy fillets (optional)
1 - 2 chilies - sliced (optional)
2 - 3 mushrooms sliced
Grated mozzarella cheese.

METHOD:
Spread the Red Ochre® Bush Tomato Chutney over the base.
Sprinkle with chopped tomato
Add the sliced smoked Beef pieces and cover with cheese.
Lastly add the other ingredients (as desired) and bake in a very hot oven until browned nicely.

Stir-fry Szechuan Kangaroo with Red Ochre® Bush Tomato Chilli Sauce

300gm Kangaroo meat - thinly sliced
1 & ½ dsp szechuan pepper
2 tsp ginger - grated
2 - 4 green chillis - sliced
2 cloves garlic - crushed
¼ bunch Coriander - chopped
25ml sweet soya sauce
½ cup Red Ochre ® Bush Tomato Chilli Sauce
2 tsp sesame oil
½ red capsicum - sliced
2 cups bean shoots
2 Bok Choy - quartered
¼ cup peanut oil
¼ cup water

METHOD:
Dry roast szechuan pepper 1 - 2 minutes and grind.
In a Wok heat half the peanut oil and stir fry the Kangaroo a few minutes, keeping rare.
Remove and keep warm.
Add the sesame oil, remaining peanut oil, pepper, ginger, garlic and chilli and fry for 1 - 2 minutes before adding the vegetables.
Toss again for a minute then add Red Ochre® Bush Tomato Chilli Sauce, water and sweet soya sauce.
Simmer for a few minutes, then add the meat to reheat.
nServe with steamed rice or noodles garnished with the coriander and bean shoots.

Simply Green Tomatoes & Squashed Potatoes

  • 6 medium potatoes
  • 1 tablespoon of Simply Green Tomatoes


METHOD:
Wash unpeeled potatoes and cook until soft. Cool, then place potatoes between paper towelling and squash to flatten the potatoes slightly. Place on an oven tray and cover them with Simply Green Tomatoes and oil. Bake in a moderate oven untl nicely browned. optional: Add a little rock salt before cooking. Browns very quickly in 5-10 minutes.

Simply Green Tomatoes Dip or Spread

  • 2 tablesppons of Simply Green Tomatoes (drained)
  • 1 cup of light cream cheese


METHOD:
Blend or process the above together until smooth. Serve on crackers, use as a dip or even spread on sandwiches. The reserved olive oil can be used for shallow pan frying chciken or as a salad dressing.
